4 cups reduced-sodium chicken broth
8 cups water
1 fully cooked bone-in smoked ham shank half (about 1 pound weight)
1 tablespoon garlic, minced
1 cup yellow onion, chopped
1 can (14.5 oz each) Hunt's® Diced Tomatoes
1 pound fresh collard greens, rinsed, stems removed and chopped into 1-inch wide strips or squares

Place broth, water and ham shank into large, 6-quart pot. Bring to a boil then reduce heat to medium and simmer for 45 minutes. Remove ham shank and cool slightly, then pick meat from bone, chopping into bite-size pieces as needed. Discard bone and return meat to pot.
Add garlic, onion, tomatoes and collard greens. Stir until leaves are submerged. Continue simmering for 45 minutes to 1 hour or until leaves are tender, stirring occasionally.
Ladle greens mixture and broth into bowls. Serve alongside desired add-ons.
For an added kick to your greens, add 1 tablespoon red pepper flakes to your broth, or add a few dashes of your favorite hot sauce. Other popular add-ons include diced raw onion, red wine vinegar or apple cider vinegar, and fresh-baked cornbread.
